Instructions

Mix the flour and salt in a large bowl. Make a well in the centre and crack in the eggs. Gradually whisk in the milk, starting from the centre and working outward, until you have a smooth, lump-free batter.

Heat a frying pan over medium heat and melt a small knob of butter. Pour in a ladleful of batter and swirl the pan to coat the base evenly. Cook for 1–2 minutes until the edges start to lift and the underside is golden, then flip and cook for another minute.

Repeat with the remaining batter, adding a little butter between each pancake. Serve with toppings of your choice, such as syrup, powdered sugar, or fresh fruit.
